Its origins are deliciously debated: some trace it to the Punjabi kitchens of northern India, others to the South Asian diaspora in Britain. What is undisputed is its extraordinary flavour.

The magic lies in two distinct stages. First, the chicken is marinated in yoghurt and spices, then charred under high heat — ideally in a tandoor oven, but a screaming-hot grill or cast-iron pan achieves that same smoky, caramelised crust. Second, those charred morsels are bathed in a deeply aromatic masala sauce: a slow-cooked blend of tomatoes, onions, cream, and a carefully balanced spice blend that is warming without being fiery.

This recipe honours the classic while refining every step — from the overnight marinade to the finishing touch of kasuri methi (dried fenugreek leaves) that gives authentic tikka masala its unmistakable, slightly bitter depth.

Add the chicken, coat thoroughly, cover, and refrigerate for at least 4 hours — overnight is ideal for maximum flavour and tenderness.
